Just Like Chipotle’s Corn Salsa Recipe

I always ask them for a double scoop when I am at Chipotle this awesome corn salsa is too good not to get to heaping spoonfuls of it! Ingredients

Canned Corn
Purple Onion
Cilantro
Lime
Salt & Pepper

Step One
Drain and poor canned corn into your bowl

Step Two
Thinly dice the purple onion. How much to add is up to you and your liking. Add to bowl.

Wash and finely chop cilantro. Add to bowl.

How To Make Pico de Gallo

Pico de Gallo is one of my favorite Mexican salsas. How to make Pico de Gallo is even more fun and easy! Pico de Gallo is a called a “salsa fresca” in that the ingredients are left raw and it is a salsa that is not liquid based and is often used as the main ingredient in dishes such as tacos, chipotle bowls or simply place in a large bowl and serve with tortilla chips for dipping! Everyone is sure to love it.Here is my very own recipe passed on from generation to generation and I am sharing it with you hoping that you make it and enjoy it!

Ingredients
5-6 Tomatoes
1 Lime
Cilantro
1/4 of a Yellow Onion
2 Chile serranos (optional)
Salt & pepper to taste!

* You will need a mixing bowl to place ingredients
How To Make Pico de Gallo

Step One
Wash and dice tomatoes and place in a bowl

Step Two
Dice onions into very small 1cm size cubes add to the bowl

Step Three
Wash cilantro and take a handful of the springs and chop very finely

Step Four
Add serrano chiles if you would like. Check out my article How To Properly Cut Chiles on how to do it and add it to your bowl!

Step Five
Mix all ingredients in bowl and add pepper (I like to add a lot) & sprinkle some salt (be gentle on the salt)

Step Six
Squeeze some fresh lime juice and mix again! Place in your serving bowl or stuff your tacos with it & enjoy!!

Fast and Health Weekday Dinner

Weekday dinners can be quite a challenge. With all of us pulling in full work days and coming home to either kids, a dog, or a significant other that requires your attention sometimes you may wish you had Rosie from the Jetsons at your house to just press a button and pop out a healthy and delicious meal. Since that isn’t the case I can’t say I am a world renowned chef or even will go on the limb to say ” I love to cook”. I will say that I do love to eat well and detest pre made, sodium & chemically filled foods. Fast and Health Weekday Dinner is what I have to learn to be a master at cooking.

So I will begin to share with you some of my recipes and tips and would enjoy receiving yours. Most of what I share will take 10mins or less to prepare and max 30mins to cook. So in 40mins total you can say no to the Microwave dinner and eat well.

Ingredients
4 Tilapia filets
1 red pepper
1 yellow pepper
A handful of cilantro
2 tablespoons of minced garlic
1 tablespoon of olive oil
Cayenne pepper

First cut your peppers into strips ( Sometimes my dog Bella helps me cook…JK)

Add olive oil to your pan and heat it to high

Healthy Holiday Eating

Healthy holiday eatings, is it possible? The holidays are a great time to reconnect with old friends, see family and meet new people! All three are excellent if you are single and dating. If Aunt Martha sees you again, maybe she can introduce you to her friends cute grandson…maybe your coworkers from the neighboring office catch you eye and you two connect over cocktails. They can be great, but can also be a huge trap for gaining weight and in dating looking and feeling your best are very crucial. You may think it is impossible not to gain weight during this time, but I am here to tell you that eating healthy this holiday season IS possible. Here are a few Health Tips to help you maintain your weight and Survive thru the Holidays
.     

THIS is NOT a DIET

  • Small Adjustments make a HUGE Difference.
  • Correct Choices Vs. a Strict Diet.
  • Portion Control is the key.

 

Eating Out
.

 

  • Ask server not to bring Rolls and Chips to your table
  • Choose dishes that comprise of Lean Meats, Fish and Vegtables. Avoid Rice and other starches
  • Opt for Sauce and salad dressing on the side.
  • Share a dish with someone or ask for a take out box right away and save half for next days lunch.
  • Don’t be afraid to ask for substitutions: Baked potato instead of fries, steamed vegetable instead of rice.
  • Avoid “Empty” Calories. cheese, sour cream, butter, and mayonnaise
add hot sauce and mustard to add flavor but not calories.

 

While at Work
..

  • Always have a water available at your desk.
  • Avoid mindless eating by having healthy snacks on hand like fruit or pretzles.
  • Pack your own lunch. This saves you belly rolls and money!

 

Company Holiday Party
. Open Bar


  • Those “FREE” margaritas are going to cost you
. big time!
  • Opt for a glass of Red or White wine
  • Drink Light Beer

  • Like mixed drinks?  DIET soda or club soda mixed drinks, avoid fruit juice based drinks.
  • Bloody Mary
 tomato juice is a great antioxidant and the Tabasco sauce kicks up your metabolism.

Families Feast
.

  • You don’t want to make aunt Cindy feel bad for not eating her food
.so..
  • Fill your plate with WHITE meat, avoid Dark meat and vegetables & add a little scoop of mashed potato.
  • Or Get a smaller plate
  • Eat Pumpkin pie Vs. Pecan or Candied yams.
  • Lastly
 just remember its only ONE Day.. so don’t beat yourself up and enjoy!

 

 

Busy Schedule
” I forgot to eat”

  • Never Skip Breakfast
 take 3mins to make oatmeal, a fruit smoothie or eat a breakfast bar.
  • Always carry healthy snacks with you like: Fruits, Almonds, baby carrots.

Pre-plan your meals

5 Tips For Better Sleep

Do you and your partner share a bedroom or do you have a playroom? So as I have previously shared I am one of millions of women reading Fifty Shades Of Grey. I found it quite interesting how they describe Christians’ “bedroom” as the “playroom” I paused for a minute and thought to myself is my bedroom a “playroom” enough? Through my conversations with clients and casual conversations with friends I realized most peoples’ bedrooms are not only NOT bedroom ready, but definitely not playroom ready either. I believe a bedroom whether you share it with someone or just yourself should be somewhere were two things are achieved: Rest and Recreation.

Here are 5 quick Tips to remake your bedroom for better relaxation or play, if that is what you want.

1. Keep Your Bedroom Clean & Clutter Less

I know it sounds repetitive, but really people: Clean Your Room! Just like your momma taught you! A cluttered room will definitely not set the mood, but it is also hard to fall asleep and sleep well when you have to find your way to your bed with all your crap all over the place. You will find yourself restless and thinking of the things you have to do & clean. It is a physical sign that leaves you feeling cluttered and dirty.

2. For Good Fung Shui Have Bed With Feet Pointing Towards Door

Not a Fung Shui expert, but there you have it. This weekend do some rearranging and google all about it!

3. Avoid Displaying Photos

Don’t know about you, but if you have a picture of your mom staring at you from your night stand
. I am not too sure how “in the mood” you can get. I say leave the photo collage and family trees pics for other areas of the house. Your bedroom is like a sanctuary and you want to keep a minimal display of visualization that brings about emotions of :
A.) Accomplishment or goals( this will cause restlessness because you will want to start working on it ASAP if your anything like me)
B.) Love for family (It will scare away the tigress and bring out a wimpy kitty)

4. Nightstand Essentials

Water, baby wipes and paper towels.. yeah I said it! Trust me you will be thanking me one night as you reach over your convenient nightstand drawer 😉

5. Sturdy Bed & Mattress

Ok people get your head out of the gutter!! Nah, your right that was exactly what I was thinking. Nothing can annoy me and kill the mood more than an uncomfortable mattress and squeaky bed!

Veggie Juices …and Dating??

What do veggie juices and dating have in common? Apparently more than I thought! Sometimes attracting good men is just as simple as dangling a carrot in their face! Literally!

I’m a bit of a health nut and I guess living in NYC doesn’t hurt since it will soon be a “crime” to drink soda I often opt for my Holy Trinity (water, coffee, vino) when the summer hits I add veggie juices to the Holy Trinity.

As much as I would like to share with you some of my favorite recipes this tip is for your love health.

Recently on a hot Friday afternoon I decided to get my 24oz favorite fruit juice. Its big, it’s bright orange and ladies it’s a male magnet!

While sippin and enjoying this delightful drink and walking in Manhattan a span of no more than 7 blocks, I was approach and engaged in 3 separate conversations with 3 different handsome men.

All three started their approach with something to do with my bright colorful orangy drink

“oh that looks like a powerful drink”
” is that your happy hour drink”
” let me guess carrot, oranges & mango?”

By the way to those men who approached me ” good job! Way to strike up a conversation about something that I was holding”
It works!
Ladies I’m just sharing this with you as a little mental note that because the majority of the male species is unconfident having something they could pin point and talk about makes you instantly more approachable

Not only was my carrot juice making men want to talk to me, it was almost as if my carrot juice sifted through the male pool and pulled out men who seemed to all be good looking, in good shape, into fitness & health.
Instant connection. Instant conversation starter.

Now if I was on the market looking I’d probably have to say I would have taken up a date offer from 2out of 3 men.

Lesson here: there is none.
Why I shared this: Because I thought it was so interesting that my little veggie delight helped me get attention For all you single ladies out there becoming the type of women that can attract men isn’t as easy as buying yourself a veggie drink, but it wont kill you if you do! So go on and get healthy and have fun meeting people!!

Juice Cleanse Recipes

If you are staring a juice cleanse, then you need some juice cleanse recipes! There are a lot of helpful books, websites information galore on the juice recipes you should try. My favorite thing to do? Is get recommendations and trust friends who have already tried some!

For my juice recipes and what to buy preparation I went to friends and the good ol’fashion NYC fruit cart guy! With there recommendations and recipes I had more than enough to work with to get my grocery shopping done for a weeks worth of juicing!
Juice Cleanse Recipes

Here were the recipes my friend Amanda tried out and loved:

Mean Green
6 kale leaves
1 cucumber
4 celery stalks
2 green apples
1 lemon
1 piece of ginger

Green Goddess
1 bunch fresh parsley
1 handful watercress
4 broccoli spears
1/2 pineapple

Beetles
2 beets
2 apples
3 celery sticks

BerryKick
2 beets
3 carrots
2 apples
2 oranges
1 celery stick
a piece of ginger

And some I would add:

SuperOrange
2 Oranges
4-5 Carrots
1/4 of Papaya

Carrots
Celery
Apples

Bananas
Blueberries
Strawberries

So to prepare myself I went out first looking for the recipes I would be using and then buying the necessary ingredients. You want to make sure not to buy too many too far in advance since fruits and vegetables are best when they are fresh.

Many times people think that doing this or eating in a healthier way is expensive or that cannot afford it, but it is NOT! I think it is just a sorry excuse for people who are too lazy to show their body some love 🙂
I went to a local farmers market and came out with a cart full of stuff enough to last me one who week! for 2 people drinking juices I spent a total of $52, the cost of 3 cocktail drinks at a hip NYC club.

Boscia Enlivening Amino-AG Eye Treatment Review

This post is my review and opinion on Boscia enlivening amino-AG eye treatment review. Whether you decide to use this or not or if you decide to use it and hate, don’t be mad at me! Do it at your own risk.

They say “Your eyes are the window to your soul” and what is there to say about the little area of skin that surrounds our eye?? Ever been called raccoon eyes? Or been told “you look very tired today” Well I have been guilty of both! And let me tell you I wanted to slap that person silly! In life no matter how you slice it you are judge on how you look. So caring for your body, your skin and what you wear in my opinion is very important.

As I entered the last years of my 20’s, yes people I am no ashamed to share my age! I am actually quite proud. If you check out my before and after below. The picture on the left I am 18 years old an you be the judge, but I think I look better at 29 than I did at 18. At age 29 you can tell I am not wearing a pound of make up or fake eye lashes… just my everyday make up.

So recently I have recently become a face product junkie. Trying out and using all types of lotions and potions. In this blog I will review what I have found to be a very good eye cream, Bosiacs enlivening amino-AG eye treatment.

For a little under $40 for .5oz you get a great eye cream free of Parabens,Sulfates,Synthetic Fragrances or dyes and a whole lot more! I suffer from under eye circles and although I have no crows feet I do use it to prevent them from popping up. The eye cream has no color or scent and goes on very smoothly. With past eye creams I have tried it is very gooey and you almost have to drag it across your eye. You do not have to worry about having to do that with this one! I recommend to apply eye cream every night before going to sleep and in the morning. The eye cream feels very refreshing and almost feels like a force field around your eyes. It seeps in well and does not sting your eyes.
In the end a well worth eye cream for anyone! Worth the expense and the time it takes to put it on!

Food Rules for Guaranteed Weight Loss

My 6 food commandments for guaranteed weight loss are not very hard to follow and may not be that surprising, but then again maybe they can help you and that is what I hope for. Here are my Food Rules for Guaranteed Weight Loss.

Are you eating too much of this  

 

The biggest excuse for eating junk food is “I don’t have enough time” or “I don’t have enough money”. My last name is not Hilton and I do not sit at home all day, so I feel you. One thing I do is to cook a lot of my own food and here are some things to keep in mind when you’re tired of eating chicken breast and broccoli or tuna on your diet. So one thing you may want to do this weekend is what I call a Fridge Makeover.

 

You cannot make yourself over without first getting rid of and adding things to eat that are better for you.  Spend sometime this weekend making over your fridge. You cant leave candy in front of a kid and expect him not to eat it, so do not think you can do the same. I call these the 6 Food Commandments. Keep them always stocked in your kitchen and make meals using them.

Spices &Herbs

Have these at home and add them to just about anything for flavor. Thyme, bay leaves, cayenne pepper, garlic, cilantro are some of my favorites to cook with. Notice they are all natural and do not come from a bottle. Sorry BBQ sauce, ketchup, teriyaki sauce are not consider a spice or herb.

Proteins

I try to not eat red meat often and limit myself to special occasional juicy steak. Red meat takes a long time to digest and it is recommended by many health professionals to not eat it often. Other forms of protein are egg whites, tofu and shakes.

Fish & Poultry

My personal favorites are salmon and chicken breast. I liked this dry white meat before I knew it was healthy. The secrete is to per marinate your chicken breast to make it juicy and tasty.

Snacks

I have a HUGE sweet tooth. I am like a chubby kid at weight loss camp, because I keep a stash of chocolates or cookies always. I have learned that if I do not eat it when I crave it, I will just end up eating more. So I have a small piece to satisfy that craving. We all have different taste buds, maybe yours is salty. Find a healthier substitute for some of your favorites.

Vegetables

The more the merrier! The greener the better! Keep those in mind. Spinach, broccoli, bok choy, carrots, peppers, etc keep vegetables in stock at your house always. They make an excellent additional to any meat or fish.

Whole Grains & Brown Rice

I am a cheap date! When I go out to eat sometimes the thing I love best is the breadbasket! I love carbs! I have learned not all carbs are created equal. To be a lot more health conscious I have opted for making brown rice just as often as I make white rice. Also I try to opt in having whole grain breads
magic word is TRY because I sure do love my Pan Dulce!
